he said Peach and Tarragon Shortcakes



I have been thinking about this one for a while.  I recently fell in love with tarragon and strawberries, but after the last post, I felt I needed to change it up a little and use tarragon with another fruit.  I couldn't be more happy with this decision.  The peaches and tarragon pair very well and the shortcake was real good.

Peaches and Tarragon

2 lbs peaches
handful of fresh tarragon
1/4 cup sugar
1 vanilla bean
2 T Clover honey

Method

1. Pit and slice peaches, place in bowl
2. Bruise tarragon and add to peaches
3. Add the rest of the ingredients
4. Let rest in fridge overnight.

Shortcake                             

2 cups all purpose flour                              
2 T. sugar                           
2 1/2 t. baking powder       
3/4 t. salt
4 T. cold unsalted butter
2 T. shortening or lard
3/4 cup half and half


Method

1. Combine flour, sugar, baking powder and salt in a bowl, whisk to combine
2. Cut butter and shortening into flour mixture
3. Add half and half, stir until just combined
4. Turn dough out on a well floured surface and shape dough to 3/4 inch thick
5. Cut to desired shape and bake at 375 F for 15 - 20 minutes.  Cool then serve
